Lamb with a quick flageolet bean cassoulet

I’m a big fan of pulses at the moment, the only thing that is essential is that they are packed full of flavour. Accompanying meat or fish with spicy lentils, or this quick and easy cassoulet adds a different texture and instant moisture to a dish. For the best of both worlds, make some crispy roast potatoes as well to soak up some of the lovely juice from the cassoulet, then everyone is happy.

Ingredients

500glamb (neck fillets, leg steaks or French trimmed rack)
3 sprigs rosemary
400gtin of flageolet beans
4 medium tomatoes
1 red onion
6clvgarlic
100mlred wine
  Olive oil
  Salt and pepper

Instructions

Finely chop 2 sprigs rosemary and 2 cloves garlic. Rub the lamb with olive oil, plenty of salt and pepper and the freshly chopped rosemary and garlic. Set aside to marinade while you make the cassoulet.

Finely dice the onion and mince the garlic. Fry gently in olive oil, with a whole sprig of rosemary, until the onions are slightly golden.

Finely dice the tomatoes and add to the onion and garlic, fry for a further few minutes. Add a good bit of salt and pepper.

Add the red wine and boil until the alcohol smell subsides, then turn down the heat and let the mixture cook down for about 10 minutes. Then remove the sprig of rosemary and add the flageolet beans. Keep on a very gentle heat and put a lid on the pan.

Meanwhile, heat a frying pan on a moderate to high heat. If you are using leg steaks, you can cook them in the pan, but with the neck fillet and rack, seal and brown in the pan for about 1 minute on each side, then transfer to a 180°oven and check after about 8 minutes. Depending on the thickness this might be enough.

For leg steaks, brown on each side in the frying pan for about 1 minute on the higher heat, then turn the heat down and cook for a further few minutes on each side.

Make sure you allow plenty of time for the meat to rest. When you remove the meat from the heat, it should be just under-cooked, then rest it under tin foil for at least 5 minutes and it will continue to cook in the residual heat.

To serve, carve the meat into thick slices and serve on top of a spoonful of the beans. We had this with some griddled courgettes and rosemary roasted potatoes.
